A Michelin Guide favourite (recommended from 2014-2017) from the team behind Japan Centre, Shoryu Ramen is the place everyone needs to visit for an authentic taste of Hakata tonkotsu ramen, handmade gyoza, Hirata buns (complete with Shoryu’s logo stamped on top) and a bar stocked with shochu, umeshu and sake (manager Mimi is a qualified sake sommelier).
If you’re not familiar with Hakata tonkotsu ramen, it’s a thick, rich, white pork soup and thin, straight ramen noodles. To create the famous white tonkotsu appearance, each pan of stock is cooked for over 12 hours then combined with 'motodare', a concentrated base which is made from the best soy and spices from Japan. Executive Chef Kanji Furukawa spent six months perfecting the recipe before being satisfied it could compete with his favourite ramen bars back home.
