With a menu featuring fresh gnocchi, slow-cooked tomato passata, herb-infused lemon chicken (from their grandmother’s original recipe) and a salad bar that’s about well-sourced ingredients, this is a lunch spot that’ll transport you to rolling vine-covered hills and Med skies while ensuring you’re eating cleanly and authentically. Alongside bowls of fresh gnocchi and a salad bar (freshly made seasonal salads that cater for all food lovers incuding vegeterian, vegan and ketogenic – add protein including daily meats, burratina mozzarella or vegan patties), they also do incredible breakfasts (avo toast, toasted brioche with ricotta and homemade compotes served with lovely coffee), homemade cakes, acai bowls and smoothies.
The brainchild of Laura and her friend Alessandro, Nyokee is a family affair inspired by their love of good, healthy food that celebrates the best of Italian cooking: “Gnocchi is at the heart of what we do because it’s about quality ingredients that feed and nourish your body. Each day we sell three types of gnocchi (potato, spinach and one other vegetable). Our gourmet gnocchi is made from 70% seasonal vegetables so the net carb levels are low; but you can’t tell the difference.
“We wanted to move away from the idea that Italian cooking can be heavy and stodgy and place light, tasty ingredients on people’s plates like the Italians do. The process of creating the spinach gnocchi takes about two and a half hours (normal gnocchi takes 20 minutes). We use fresh spinach, cook it, squeeze the water out of it, mince it and then mix it with a bit of potatoes. It gives a real authentic flavour and is nutritionally so much better for you; it’s a clever way of upping your veggie intake.”
A zero waste ethos
Nyokee is also leading the way when it comes to sustainability: “My brother, Fabio, our CIO, is a passionate environmentalist so we focus on zero waste. We make everything fresh every day and when it’s run out, it’s run out. We make sure we know where every product comes from and choose suppliers who ensure nothing is processed.
“We’d rather run out of food then have leftovers. All packaging is compostable and we give a discount to anyone who doesn’t take the cutlery as this is the only thing we haven’t found the right product for yet.”
What makes Nyokee particularly unlike other Italian-inspired pop-ups is Laura’s own background: “It all came about because I had an illness and couldn’t shake it. I decided to go completely ketogenic and eliminated any sugar from my diet for three months. It made such a difference to me. We don’t add sugar and we try to add vegetable options to our gnocchi to reduce net carbs and also serve ketogenic bread which I make at home myself. Because I’m a health coach, intergrative nutritionist and planning on doing a biochemistry degree, I’m fascinated about how the food you eat affects every function of your body.”
